We are almost finished can you hand me the white pepper  why white pepper not black aren’t they  the samt thing   well they from the same plant white pepper is milder I usually prefer it  it has more subtle   how   if they are from the same plant   well it sort of depends on how ripe it is when it is picked  you sure ask a lot of questions  because you have the ansears  dia you study about the stuff in cooking school  yeah  we studing all kind of herds and spices   go on tis interesting  how do  we get black pepper then  well the pepper corn is  actually a fruit  and it go on vines  and it is ont really black or white  it turns form green to yellow to red as it ripens  for black pepper  you picked it when it is still a little immature and its dried

Odrying darkens it ?  well the skin turn dark  as it dries  is that the white pepper is pepper without the skin  it put out to dry in the sun after the skin is robbed off  it is also mature a little longer than black pepper  so they do all that just to get a milder pepper corn ? that and roe aesthetic reason   some chefs like the idea that it keeps white sauces white   these green pepper are interersing  I have never seen before   some pepper has a very distinctive flavor  some people really like it  so it really get picked when it very young   right  it not dry in the sun  it ‘s either put in the liquid or freeze dried to keep its color  well you are quitpepper  expert  are you  a good chefs got to know spices  I well be a judge of that  let me taste  you pass

Ok in the last class we have discussing big bands swing   music   you remember this is d music with steady rhythm  but today we will be able to cite sort of music   play the smaller jazz  bands  now bebop makes use all sorts of new types rhythm somr of them very irregular  we will talk about later  first I want to tlak about some of social elements that I believe contributed contributed to the development of bebop music  to do this we have to look at  when bebop rose and started  becoming so  popular  which is from 1920 to 1940  from great time of depression right into the two th world war  centain  created  now one factor help create the environment for beop music  was the decline of usa economy  during the great depression the economy suffered tremendously  and fewerpeople had money to spend on entertainment  then during the world war two  the government imposed new tax  public entertainment what may call that performance tax  the government collect money on performance tax include many kind of acting dancing and singing but not  instrumental music  so to avoid new tax some jazzband  stop use singers   together  they stared  relying on the creativity of instrumentalist to attract audience   this is what bebop band did  now remember  a lot of band have singers  so  intreumentalist simply paly in background  and have occasional solos  while  singer  sang the melody to the songs   but not bebop band  so intreumentalist have much more freedom to be creative   so they experimented play ing fast and using new irregular sorts of  rhythm    29天 第二篇

The castle rancing industryt  started in the weatern usa in the late 1800s as the industry develop  so did the horse contests that we called rodeos rodeos weren’t always the big entertainment shows that we see nowadays  the first one is small contests  formal competition among that called cowboy  although they didn’t clude (started as   historical  both    )   one duty of cowboy were to guide herds of cattle from the grassy ranges in to town  along the railroad  where the cows were roaded on to trains  these cowboy gather near cow town to compete for unoffical title best horse rider  they would demontrate the riding skills that they had learned as a matter of survival  the audience was composed mainly of other cowboys who watch the competitors quietly  since they knew  what the eventswere all about  rodeos    contests  tooka   different turn in the 1890s   when the organizor began to hold the cowboy sports during yaerly agriculture fairs  what was different was the audience   consist  of  unfamiliar  they were amazed by the skill of rider and intelligence of horses  rodeo agricultural fair became so popular that the rancher and bussiness   organize  the rodeo as   independent evnts  separate from fair  the organizer  bulit large  arenas and earn money by requiring spectators to pay for admission  notable    annually   independent     听晕了
